Menu Plan Monday


Now that fishing is basically over and the cranberry harvest is complete, Kevin will be home most of the time (doing computer work for now) and structure can once again return to our household. During fishing season, I never know what days/nights Kevin will be home and thus can't plan many meals ahead of time. When it's just Abby and me, we eat more simply and also go over to my mom's house more often. =) So, I'm looking forward to being able to create a menu plan for the week. But I also have to cook with Kevin's tastes in mind, which makes it a bit harder since I like to be a bit more creative and outgoing with my taste buds. ;o) This is what I've come up with, subject to change of course:

Monday: Leftovers for Kevin and Abby (I have a ladies' dinner/meeting at church)
Tuesday: Dinner at my mom's (afterward, Kevin and I go play open gym volleyball while mom babysits)
Wednesday: Chicken Tortilla Chip Casserole
Thursday: Three Bean Turkey Chili
Friday: Chinese Chicken Fried Rice
Saturday: Potato Leek Soup (still looking for a recipe, never made it before - any suggestions?)
Sunday: Chicken Fried Steak

I hear ya on not knowing about when the hubby will be around for dinner. It's a struggle! Busy season I still cooked but left it in the oven on warm so he could still come home to a warm meal, beit at 9 or 10pm! Even now he flies in the door just in time to eat or sometimes we have eaten...the joys of a busy hubby! I have learned with meal planning to only have 3-4 meals planned a week (or less with ones like chili or soups that last more than two meals)as leftovers can sometimes come into play and an out of house meal (mom's, restaurant, etc) Happy meal planning! :)

Yes, hard when they don't come home until late and harder still when you don't even know if they're coming home at all. Sometimes I'd think he wasn't coming for three or four more days and then I'd get a call out of blue from Kevin telling me he'd be home in an hour!

Good suggestions about the meal planning. Basically, I realize that I'll probably not make one or two of these this week and opt for leftovers, but we do tend to eat our leftovers for lunch and I like to freeze the remaining soups/chilis for later.

did you ever find a recipe for potato leek soup? i'm getting leeks in our csa share, and we have way too many potatoes...if you come across a good recipe, please share! :o]

Andrea - I ended making the soup last night. The recipe I used is here: http://allrecipes.com/Recipe/Creamy-Potato-Leek-Soup-II/Detail.aspx It turned out pretty good. It's a very simple recipe, but we were pleased. I used some of Abby's whole milk instead of heavy cream. No need to puree part of it in order to make it even creamier (as some of the reviewers suggested) if you let the potatoes cook extra long and break down a bit. Kevin and I couldn't figure out what the fuss was all about with the leeks (first time for both of us). Next time I'll just use onions (cheaper) in less quantity since they have more flavor than the leeks. But the leeks did add a nice color to the soup and it's a great recipe to use a good amount of leeks and potatoes since you have extras! Oh, some shredded cheddar cheese sprinkled on top adds some extra flavor.
